One of my favorite parts of coming to Mexico is being able to drink Coca Light! It tastes SO much better than Diet Coke (and that’s saying a lot because I love DC!). Our room at this resort is so wonderful – we have a deck that wraps around with our own pool and two outdoor beds. I’ve actually been working in the mornings from one of the outdoor beds – its so peaceful and feels so so nice out (and the wifi is stronger haha). These shots were actually taken right outside on our balcony on Sunday afternoon… we went down for lunch and came back up to relax on our little deck.

I do miss my little Fitzy baby though! I can’t help but think about him all day… You guys probably know we always bring him home a ‘souvenir’ so we are actually going to do that today. (He prefers souvenirs that are stuffed with easy to tear out eyeballs.. ah.)

This year, more than ever, I’ve really been loving one-piece swimsuits. My first ever ‘designer’ swimsuit was by Trina Turk and it’s still one of my favorites – its bright, super flattering, and great quality. I decided to give in and purchase another since I’ve enjoyed the other. I’m linking 10 fun, bright color one-pieces in the tool below – they are mixed up kind of, but easily 10 of the cutest I’ve seen lately!

Oh, so I’ve decided I’m going to start cooking more (random, I know!) but John and I are struggling on recipes. We are both picky (like I eat kids meals) and don’t love veggies. If you have some delicious recipes that are more healthy and not too complicated, helped a sister out! 🙂

  4. Love the suits! For easy recipes I have made a grilled chicken breast and melted a slice of Swiss cheese on top and added a little salsa and it was delicious! I had steamed broccoli on the side but I think it'd be good with rice, too. ????

  5. I love all of the bright one pieces! They're flattering for almost all body types. I cook very simple meals – baked chicken or fish with a side of veggies typically. I have cookbooks by The Pioneer Woman and her recipes are easy to follow and they're not too fancy/have weird ingredients!

  13. I need a one piece swimsuit! That's also the same room (or type of room) my husband and I stayed at at that same resort for our honeymoon.. we're going back next month for our anniversary! I was in love! That private pool is amazing.

  16. Such a cute swimsuit! If you have a crockpot, my husband and I love crockpot chicken tacos! 4 chicken breasts, 1 can of any salsa, garlic, pepper and lime juice, cook on high for 4 hours and shred with two forks, then put inside any taco with whatever you like. It makes meals for days!

  19. My boyfriend is super picky and hates veggies so I'm often struggling to find things that he likes too 🙂 someone mentioned crockpot tacos, they are right. Could not be easier or more delicious. Linked recipe. Also chicken pot pie recipe is a favorite that I have discovered and gotten my whole family to love. Also a good way to get in veggies without being able to taste them at all! I have listed a couple other favorites below…all super easy. I cant stand super involved recipes!

  20. This suit is so, so cute on you and I love the color of your coverup! And Coke Light really is SO good! I tried it when I was in Belize and was blown away by how good it was. I am a DC lover as well. As for good recipes, I love doing crockpot soups. I make a white chicken chili that is super basic and healthy that I think you guys would like.   21. Coke Light! My absolute favorite drink! You are right, it is just better than diet coke. I bought a bunch in the Frankfurt airport and brought them home with me to Denver on my carry on. It weighed a lot, but it was worth it! Have fun in Mexico! Kim

  28. Gorgeous swimsuit, I love all the different colours!

    My advice to get more veggies? Get yourself a spiralizer & make zucchini pasta. Then you can eat it with all of your favourite pasta sauces! It tastes just like real pasta but you're getting an extra dose of your greens without knowing it!

  33. Love your blog! You asked about recipes so here is my advice. If you are cooking for two, I highly recommend using Blue Apron or Green Chef. They're meal services for two. They're both awesome and super easy since its all prepackaged/measured. Blue Apron is a little less "healthy" food haha. Its healthy but they'll have burgers, mashed potatoes, fried chicken, ramen in addition to healthy meals like fish. But Green Chef has really healthy meals especially if you do the paleo option. They are both essentially the same thing and have the calories posted. Everything I have had from both sites has been super good and my boyfriend has loved them as well!

  35. I am TOTALLY into one pieces this summer- there are so many options available! Robin Piccone is one of my favorite "designer" bathing suit brands. All of her stuff is perfection! And this cover up totally looks like the BP tunic you wear all the time, I actually thought it was that!

  41. I love doing quinoa, black beans, cheddar, your fave salsa (I like whole foods chipotle salsa) and chopped avocado over shredded lettuce. Sometimes I'll sauté peppers and onions and add that too. So easy and so good! I make quinoa in the rice cooker – so much easier than using the stove 🙂

  44. Crockpot potato soup
    1 bag frozen hashbrowns
    1 can cream of chicken soup
    1 32 oz chicken broth
    1 cream cheese, cubed
    Salt and pepper to taste
    Throw in crockpot on low 6 hrs. Add shredded cheese, bacon bits, or sourcream to taste
